In 2004, two self-proclaimed foodies, Sol & Dawn, set out to find an opportunity to open a fun and creative business in the food and beverage industry. The right opportunity had to blend Sol's business savvy and technical leadership in the technology industry with Dawn's great abilities as a cook. In the winter of 2011 they hit on the idea to open a Colorado micro-distillery in their home town of Denver. While working to open their location they discovered that making spirits was in Sol's blood. During prohibition his family was moonshining outside Chicago. As the story goes the old still remains buried in a secret location in Indiana.
In 2014, with a few dollars and a new still (the old one hasn't been located yet) Rising Sun Distillery was born.
At Rising Sun Distillery our mission is to produce the finest hand-crafted distilled spirits and have fun doing it! As a true micro-distillery, we pride ourselves on making sure every lovingly prepared batch of spirits is as good as it can be. How do we do it? It's simple, we do everything from scratch and we don't cut corners. For us, this means starting with the best locally sourced produce and grains we can get our hands on. Using this approach is smart, sustainable, and oh so good! We then process our raw ingredients and prepare them using pure-filtered Colorado water. Finally we distill it to perfection with our custom built equipment and artfully finish it for your consumption. While other processes may be easier, we know doing it this way creates the best quality and consistency for making each and every batch.
